Is anyone else looking for an afternoon fix that isn’t coffee? As I ease into 2025 and in the middle of dry January, I’m looking for my sip fix in any way that I can. I knew I wanted to do something with Lavender this week. Our new house has this lavender bush that is popping off, so I needed to put it to good use. Also anyone have any gardening tips for me?

Lavender & Vanilla Bean Simple Syrup
Not to say that this is the star of the show, but it really really is. It add such a nice layer of sweetness for the London Fog that I think it needs. I also opted to use honey as my sugar instead of white granulated because again, I think the rich honey flavors play such a nice role in the drink! So here’s the recipe for the syrup that we’ll use for our London fog. Oh! and I want to note, I made a half amount of this syrup. So, feel free to bump this up to a full cup if you’re going to want to use more of this throughout the week!
Ingredients:
1/2 cup honey, a Clover honey works nice here!
2-3 sprigs of fresh lavender
1/2 vanilla bean, split in two
1/2 cup filtered water
Instructions:
Add all ingredients to a saucepan and place on medium heat.
Stir until the honey has incorporated with the water to create that syrup-like consistency.
Let simmer for 5-6 minutes.
Remove the lavender sprigs from the pot at this point if you want to avoid an overbearing lavender flavor, some are more sensitive than others!
Let cool and strain.
Store in the fridge for 2-4 weeks!
