Here’s something for the dessert-first lovers (hi, it’s me). If a slice of carrot cake and an espresso martini had a love child, this would be it. It’s creamy, cozy, spiced, caffeinated—and yes, it packs a boozy punch obviously. The star of the show, Carrot Cake simple syrup, and this can be used in this cocktail, your morning coffee, I’d go so far to say this would even taste good in a margarita… too crazy?

Let’s get into making this Carrot Cake Syrup first before making our cocktail
Carrot Cake Simple Syrup 🥕
Ingredients:
1 Cup Brown Sugar
1 Cup Carrot Juice, just blend carrots and water & strain
1 tbsp Pumpkin Spice
2 tsp Vanilla Extract
1 tsp Almond Liqueur, or extract!
Instructions:
To a saucepan, add sugar, juice, and pumpkin spice.
Place on medium heat and stir until the sugar dissolves.
Let simmer for 10 minutes and then let cool completely before straining.
Stir in the vanilla and almond liqueur.
Store in the fridge for up to 4 weeks!
Carrot Cake Espresso Martini
serves two!
You’ll need:
3 oz vanilla vodka
1 oz carrot cake syrup (see above)
¾ oz almond liqueur (like Amaretto or Disaronno)
3 oz freshly brewed espresso
1.5 oz coffee liqueur (like Mr. Black)
To make it:
Add all ingredients to a shaker filled with ice.
Shake vigorously—like, really shake it. You want that creamy froth on top.
Double strain into a chilled coupe or martini glass.
Garnish with a little whipped cream and a walnut OR you can top with a CREAM CHEESE WHIPPED CREAM… sigh… keep reading… it’s good.
A cream cheese whipped cream is chef's kiss for this cocktail. It leans into the carrot cake vibes even more and adds the perfect tangy richness to balance the sweetness and coffee flavors.
🍰 Cream Cheese Whipped Cream (for topping)
Enough for 4+ drinks (or just one very generous dollop, no judgment)
2 oz cream cheese, softened
1/2 cup heavy whipping cream
2 tbsp powdered sugar (adjust to taste)
1/4 tsp vanilla extract
To make it:
In a mixing bowl, beat the softened cream cheese until smooth.
Slowly add the heavy cream while continuing to whip—start slow so it doesn’t splatter!
Add powdered sugar and vanilla, and whip until soft peaks form.
Pipe or dollop onto each cocktail right before serving.
